Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓
To Pickle Tongue
Ingredients
Directions
In a large pot, combine 1½ gallons of soft water, 3¼ pounds of coarse sea salt, 10 ounces of brown sugar, 2 ounces of saltpetre, and 3 ounces of black pepper.
Boil the mixture and let it cool.
Submerge the tongues in the cooled pickle for one month, turning them upside down occasionally.
After a month, remove the tongues, wipe them dry, and tie them in brown paper.
Have your butcher smoke the tongues for you.
When ready to cook, soak each tongue in water.
For cooking, add 6 ounces of salt, 2 ounces of coarse sea salt, and cloves, mace, and allspice to taste.
