String Beans

Ingredients

Directions

  1. Break off the tips and stems of the string beans to remove the thin strings on both sides.

  2. Simmer the beans gently in boiling water for at least 1.5 hours without adding salt.

  3. Drain the beans in a colander and set the colander in a pan of cold water to cover the beans completely.

  4. Let them stand for 20 minutes, then drain again.

  5. Use the beans for salad or cook them in cream sauce if serving as a vegetable.
