Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the butter, flour, grated cheese, egg, salt, and cayenne until smooth.

Shape and bake

  1. Roll out the mixture as thin as possible.

  2. Cut into strips about ¼ inch wide and 3 inches long, and also cut out rings.

  3. Bake for about 10 minutes until golden.

  4. Hang the rings on sticks to cool.

Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat for a short, tender texture and rich flavour.
Flour
Forms the structure that holds the dough together and sets when baked.
Soft cheese
Adds savoury flavour and fat, and browns during baking.
Egg
Binds the dough and adds structure and richness.

The step that matters

Roll out the mixture as thin as possible.. Thin dough bakes quickly and becomes crisp, while thick dough stays doughy in the centre. Even thickness also helps the strips and rings brown at the same rate.
