Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the lemon liquid into a silky layer that holds its shape.
Egg whites
Whipped into foam to form a light, airy topping.
Oranges
Provide the fresh fruit base and bright citrus flavor.
Sugar
Sweetens the syrup and helps stabilize the whipped egg whites.

The step that matters

Whip egg whites with a little sugar and flavor with lemon essence.. Egg whites must be whipped to stiff, stable peaks before being spooned on top; under-whipped whites deflate and sink into the custard layer, and any trace of fat or yolk prevents them from foaming properly.

Swap the orange

How well each one fits the dish's main ingredients (sugar, lemon, corn, milk, egg):

  1. Vanillafits better
  2. Orangethe original
  3. Figfits about as well
  4. Coconutfits about as well

Fit is the average pairing score against sugar, lemon, corn, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
