Cream Meringues

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

Make the meringue

  1. Whip the egg whites and powdered sugar until stiff.

  2. Add the flavoring and mix well.

  3. Heap the mixture in the shape of half an egg on parchment paper, leaving ½ inch between each.

Bake and fill

  1. Bake until light yellow brown, then remove and cool quickly.

  2. Use a knife to slip under each meringue, scoop out the soft inside, and fill with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that holds the meringue's shape and structure.
Powdered sugar
Sweetens the meringue and stabilises the whipped egg white foam.
Whipped cream
Fills the cooled shells, adding moisture and a soft, creamy contrast.

The step that matters

Bake until light yellow brown, then cool quickly. Baking dries the meringue and sets its structure, while browning adds flavour. Over-baking can scorch it, and cooling slowly in a humid room can make it soften or weep.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, cream):

  1. Vanillafits better

  3. Strawberryfits about as well
