Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rolled oats
Release starch as they cook, thickening the water into a smooth, body-rich jelly.
Cream
Adds fat for a richer mouthfeel and softens the flavour of the oats.
Egg whites
Beaten, they add foam and lightness, giving the gruel a softer, airier texture.

The step that matters

Stirring while the oats cook. Oats settle and scorch on the bottom of the pot as the starch thickens. Constant stirring over medium heat keeps the mixture even and prevents a burnt taste.

Swap the nutmeg

How well each one fits the dish's main ingredients (oats, cream, egg, sugar):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Gingerfits less well
  4. Capersfits less well

Fit is the average pairing score against oats, cream, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
