What each ingredient does

Beef
Adds savory meat flavor to the broth as it simmers slowly.
Green peas
Provide the main body of flavor and sweetness, with pods boiled first to build the broth.
Rice flour
Thickens the soup as it cooks, giving it a fuller body.

The step that matters

Stirring in the rice flour. Starch from flour can settle and scorch on the bottom of the pot, so frequent stirring keeps it dispersed and prevents burnt flavor.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (beef, peas, rice, flour, pepper):

  1. Turmericfits better
  2. Cardamomfits about as well
  3. Celeryfits about as well
  4. Parsleythe original

Fit is the average pairing score against beef, peas, rice, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
