Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Wash the onions thoroughly without removing the skins.

  2. Boil the onions in salted water for 1 hour, changing the water twice with boiling‑hot water.

  3. Remove the onions and place them on a cloth to absorb moisture.

Bake and finish

  1. Wrap each onion in buttered tissue paper, twisting the top to seal it, and bake in a 300°F (150°C) oven for nearly 1 hour.

  2. Once tender, peel the onions and place them in a deep dish.

  3. Brown the onions slightly by basting with butter for about 15 minutes.

  4. Serve in a vegetable dish, pouring melted butter over them and sprinkling with pepper and salt.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Gentle boiling and baking soften them until tender, while their sugars develop a mild, sweet flavour.
Butter
Adds richness and moisture, and helps the onions brown lightly when basted.
Coarse sea salt
Seasons the cooking water and the finished onions, bringing out their flavour.

The step that matters

Drying the onions before wrapping. Removing surface moisture on a cloth keeps the buttered tissue from turning soggy and helps the butter cling and brown rather than steam the onions.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
