Wild Duck

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 400°F (200°C).

  2. Clean and cut the wild ducks into joints.

  3. Season the duck joints with coarse sea salt and black pepper.

  4. In a large skillet, melt butter over medium heat and brown the duck joints on all sides.

  5. Transfer the browned duck to a roasting pan and roast in the oven for 25-30 minutes.

  6. In the same skillet, add shallots and sauté until translucent.

  7. Deglaze the skillet with wine, scraping up any browned bits.

  8. Add truffles and simmer for a few minutes to create a sauce.

  9. Serve the roasted duck joints with the truffle sauce drizzled on top.
