Make Cottage Cheese
Ingredients
Directions
Warm the skim milk to 75°F (24°C) in a pail or can.
Allow the milk to stand at that temperature until it curdles, which may take 10 to 15 hours with a starter.
If using a starter, add 1 cup per gallon of skim milk for better results.
Monitor the temperature with a thermometer; do not guess.
Keep the milk in a water bath to maintain the temperature.
