What each ingredient does

Coarse hominy
Forms the main body of the dish, softening into a thick, starchy mass as it cooks.
Milk
Adds richness and a creamier texture to the finished hominy.

The step that matters

Keep enough liquid during the long cook. Hominy keeps absorbing water over many hours, so it can dry out or scorch on the bottom of the pot. Adding water as needed keeps it moist and evenly cooked. Adding milk late, shortly before removing from heat, reduces the risk of scorching it.
