Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Scrub, pare, and boil the sweet potatoes in salted water for 10 minutes.

  2. Drain and cut the potatoes in halves lengthwise.

  3. Place the potatoes in a buttered baking pan.

Glaze and bake

  1. Make a syrup by boiling sugar and water for 3 minutes, then add butter.

  2. Baste the potatoes with the syrup.

  3. Bake in a 400°F (200°C) oven for 15 minutes, basting every 5 minutes until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Form the main body of the dish, becoming soft and tender after boiling and baking.
Sugar
Dissolves into the syrup and caramelizes in the oven, giving sweetness and a browned glaze.
Butter or other fat
Adds richness and helps the glaze brown evenly on the potatoes.

The step that matters

Basting the potatoes in the oven. Brushing the syrup on repeatedly builds up a thin, glossy layer of sugar that caramelizes as it heats. Basting too little leaves the glaze thin and pale, while the sugar can scorch if left unattended at high heat.

Swap the sweet potato

How well each one fits the dish's main ingredients (sugar, butter):

  1. Sweet potatothe original
  2. Leekfits about as well
  3. Potatofits about as well
  4. Capsicumfits less well

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
