What each ingredient does

Bran
Provides the bulk and body that holds the cakes together.
Agar agar
Dissolved in boiling water, it sets as it cools, binding the cakes into shape.

The step that matters

Boiling the agar agar and water. Agar only dissolves fully at a boil. If it is not completely dissolved, it will not set evenly when the mixture cools, and the cakes may crumble or stay soft.
