What each ingredient does

Heavy cream
Whipped into peaks, it adds lightness and a creamy, rich texture to the cream.
Gelatin
Sets the liquid mixture into a firm yet tender structure when chilled.
Sugar
Sweetens the coffee and helps balance its bitterness.
Brewed coffee
Provides the main flavor and liquid base of the cream.

The step that matters

Fold whipped cream into coffee mixture. Gelatin must be cool but not yet set, or the mixture thickens unevenly and the whipped cream deflates. Folding gently keeps the air bubbles that give the cream its light texture.
