Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the juice as it heats, giving the sauce body.
Egg yolk
Enriches the sauce and adds richness and body as it cooks.
Orange
Supplies the juice and aromatic oil that flavour the sauce.

The step that matters

Add the beaten egg yolk. Egg yolk can scramble if it meets very hot liquid directly. Beating briskly while adding it helps distribute the yolk evenly and keeps it smooth.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
