Make the batter

  1. In a bowl, mix the cold riced potatoes, egg yolks, milk or cream, peas, seasoning, and cheese if using.

  2. In a separate bowl, beat the egg whites until stiff peaks form.

  3. Gently fold the beaten egg whites into the potato mixture.

Bake

  1. Pour the mixture into a greased baking dish.

  2. Bake until golden brown on top.

What each ingredient does

Eggs
Yolks enrich the base, while whipped whites lighten it and give the puff its rise.
Riced potatoes
Provide the bulk and soft, starchy body that holds the puff together.
Milk or cream
Adds moisture and richness, keeping the interior tender rather than dry.
Butter
Adds fat for richness and helps the top brown in the baking dish.

The step that matters

Folding in the egg whites. Whites hold air only when whipped to stiff peaks. Folding gently keeps that air in the batter, so the puff rises in the oven instead of deflating.

Swap the peas

How well each one fits the dish's main ingredients (potato, egg, milk, cheese, butter):
