What each ingredient does

Sweetbreads
Provide the tender, delicate meat that is the centrepiece of the dish.
Milk
Gently stewing in milk keeps the sweetbreads moist and mild in flavour.
Fat bacon
Its fat bastes the sweetbreads during baking, adding moisture and savoury browning.
Grated parmesan cheese
Melts and browns on the surface, adding savoury flavour and a golden crust.
Rich brown gravy
Braising in gravy adds moisture and deep savoury flavour to the sweetbreads.
Gluten bread
Forms the croutons that support the sweetbreads and soak up the juices.

The step that matters

Return to the oven and braise in rich brown gravy. Sweetbreads dry out easily. Braising in gravy at a gentle heat keeps them moist and lets the flavours meld, so the final step should not be rushed or overcooked.

Swap the peas

How well each one fits the dish's main ingredients (milk, parmesan cheese, bread, tomato, beans, mushroom):

  1. Lima beansfits better
  2. Peasthe original
  3. Chickpeafits about as well
  4. Chestnutfits less well

Fit is the average pairing score against milk, parmesan cheese, bread, tomato, beans, mushroom. Candidates are from the same food group and used in at least 100 recipes.
