Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Boiled Salmon and Lobster Sauce

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Fill a large pot with water and add salt. Bring to a boil.

  2. Add the whole salmon and cook until done, about 15-20 minutes.

  3. In a separate pot, cook the lobster in boiling water until bright red, about 10 minutes.

  4. Remove the lobster, let it cool, then extract the meat.

  5. In a saucepan, melt butter and mix in lobster meat, lemon juice, and pepper to create the sauce.

  6. Serve the boiled salmon with the lobster sauce drizzled on top.
