Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Clean the sheep's stomach thoroughly and soak it in cold water overnight.

  2. Chop the liver and heart, then mix with the chopped onion.

Stuff and cook

  1. Add oatmeal, salt, pepper, and mixed spices to the meat mixture.

  2. Stuff the mixture into the sheep's stomach, leaving some space for expansion.

  3. Sew the stomach closed and place it in boiling water.

  4. Simmer for about 2 hours, ensuring it is fully cooked before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oatmeal
Absorbs juices and fat, giving the filling a crumbly, binding texture.
Sheep's liver
Adds rich, savoury depth and a soft, moist texture to the filling.
Sheep's heart
Contributes dense, meaty body and savoury flavour to the filling.
Onion
Adds sweetness and aromatic flavour as it cooks into the filling.

The step that matters

Leaving room in the stomach before sewing. The filling expands and the stomach can burst if it is packed too tightly, so leaving space for expansion lets the oatmeal swell safely during simmering.

Swap the onion

How well each one fits the dish's main ingredients (liver, pepper, cumin, coriander):
