What each ingredient does

Dried peas
Break down during long simmering to thicken the broth and give the soup its body.
Meat
Releases flavour and fat into the broth as it simmers, giving the soup its savoury base.
Pot barley
Releases starch as it cooks, adding further thickness and a chewy texture to the soup.
Onions
Add aromatic sweetness and depth of flavour as they soften in the simmering broth.

The step that matters

Adding water to maintain 1 gallon. Long boiling reduces the liquid and concentrates the soup. Topping up with water keeps the volume and consistency right, so the peas and barley stay properly thinned rather than turning overly thick or scorching on the bottom.

Swap the peas

How well each one fits the dish's main ingredients (meat, barley, onion, sugar, pepper):

  1. Beansfits better
  2. Sesamefits better
  3. Chestnutfits better

Fit is the average pairing score against meat, barley, onion, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
