Whitehaven Corned Beef

Ingredients

Directions

Cure the beef

  1. Rub a 25‑pound round of beef with coarse sugar, allspice, nutmeg, and coarse sea salt. Let it sit, turned and rubbed daily, for one week.

  2. Add rock salt, saltpetre, vinegar, and water boiled for 20 minutes, skimmed, and cooled. Baste the meat twice daily and turn it every second day for three weeks.

Dry and smoke

  1. After three weeks, wipe the meat dry, sew a broad fillet of light canvas around it tightly, and suspend it to dry gradually in your chimney with beech and birch embers for three weeks, turning occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coarse sugar
Adds mild sweetness that balances the salt in the cure.
Coarse sea salt
Draws moisture out of the meat and seasons it during the cure.
Rock or common salt
Preserves the meat by drawing out water and slowing spoilage during the long cure.
Saltpetre
Helps preserve the meat and gives cured meat its characteristic pink colour.
Allspice
Adds warm aromatic flavour to the outside of the meat.
Vinegar
Adds acidity to the brine, adding tang and aiding preservation.

The step that matters

Keeping the meat fully submerged and turned during the cure. The cure must reach every part of the round evenly. Turning and basting redistribute the brine and salts, so that no area stays uncured and open to spoilage over the three weeks.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, allspice, vinegar):

  1. Cinnamonfits better
  2. Clovefits better
  3. Nutmegthe original
  4. Gingerfits about as well

Fit is the average pairing score against sugar, allspice, vinegar. Candidates are from the same food group and used in at least 100 recipes.
