Why it works: Barley and parsley match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 630 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Barley Soup

Ingredients

Directions

Cook the barley

  1. Wash the barley in cold water.

  2. Drop the barley into 30 gallons of boiling water and cook slowly for about 1¼ hours.

  3. Drain the barley and place the stock in a kettle.

Make the soup

  1. Add the ground white pepper and coarse sea salt, and place the parsley in a bag or perforated spice box.

  2. Bring the stock to a boil and add the drained barley.

  3. Let it come to a boil again, then turn off the heat and remove the parsley.

Fill cans

  1. Fill cans with the soup, stirring the kettle and dipping from the bottom to ensure even distribution of barley.

What each ingredient does

Barley
Provides the chewy texture and body, as its starch thickens the broth as it cooks.
Plain stock
Forms the liquid base that carries the flavor of the whole soup.
Parsley
Adds a fresh, herbal aroma while steeping in the hot stock.
Ground white pepper
Adds a mild, warm peppery bite without dark specks in the soup.

The step that matters

Stir the kettle and dip from the bottom when filling cans. Barley is dense and sinks, so without stirring the cans filled first would get more stock and the last cans more barley. Stirring keeps the grains suspended for even distribution.

Swap the white pepper

How well each one fits the dish's main ingredients (barley, parsley):

  1. Thymefits better
  2. Dillfits better
  3. Celeryfits better
  4. White pepperthe original

Fit is the average pairing score against barley, parsley. Candidates are from the same food group and used in at least 100 recipes.
