Peas

Ingredients

• first quality peas (e.g., Sutton’s Ideal, Duchess of York, Selected Duke of Albany, Latest of All, Little Marvel)
• boiling salt water
• Harmless Green Colouring (optional)

Directions

1. Boil the peas for about 10 minutes until thoroughly cooked.

2. Plunge the cooked peas in cold water for a few seconds.

3. Fill bottles with boiling salt water.

4. Close the bottles immediately with covers and clips.

5. Return the bottles to the Sterilizer with boiling brine for 60 minutes at above 210°F (99°C).

6. Remove bottles one at a time and fill to the brim with boiling water.

7. If desired, add a few teaspoons of Harmless Green Colouring to each bottle.
