Maizk, or Indian Corn, Juldet
Ingredients
Directions
Boil the whole corn in water with a little soda until completely softened but not broken up.
Knead or roll the softened corn on a stone until the texture is homogeneous.
Divide the paste into portions and shape into cakes by rolling or clapping between your hands.
Cook the cakes on a hot plate, browning both sides until ready to serve.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
