Directions

Make the nougat

  1. Place the sugar in a small copper pan over moderate heat without water.

  2. Stir the sugar with a spatula until melted.

  3. When the sugar begins to bubble, add a few drops of lemon juice.

  4. Add the almonds and stir gently until well mixed.

Shape and cut

  1. Pour the mixture onto an oiled marble surface.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered sugar
Melts into a syrup that cools to a firm, chewy set, providing sweetness and structure.
Almonds
Provide the bulk and crunchy texture that the set sugar holds together.
Lemon juice
Adds acidity that helps prevent the sugar from turning grainy as it cooks.

The step that matters

Cut edges level with candy shears before the nougat cools. Nougat sets quickly as it cools. Once firm it becomes hard and brittle, so cutting too late can crack or crumble the pieces. Cutting while it is still soft gives clean edges.

Swap the lemon

How well each one fits the dish's main ingredients (almond, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
