To Dress Shrimps and Prawns

Ingredients

• prawns (alive)
• water
• coarse sea salt

Directions

1. Fill a pot with water and add enough salt to nearly float an egg.

2. Bring the water to a boil.

3. Add the live prawns to the boiling water.

4. Maintain a brisk fire until the water boils again.

5. Remove the prawns from the pot and place them on a table.

6. Sprinkle a little salt over the prawns.

7. Cover the prawns with a cloth to trap the steam.
