What each ingredient does

Corn meal
Forms the mush layers that set into the pie's body and crust-like top and bottom.
Chopped meat
Provides the main savory filling and fat that carries flavour through the pie.
Tomatoes
Add moisture and acidity to the filling, blending with the meat juices.
Onion
Browning in the fat builds savoury sweetness and aroma as a base for the filling.
Fat
Carries the onion's flavour and helps it brown in the pan.

The step that matters

Cook the corn meal mush fully. Corn meal must boil and then steam slowly for the full 45 minutes so the starch gelatinises and thickens. Undercooked mush stays grainy and will not hold its layers when the pie is cut.

Swap the onion

How well each one fits the dish's main ingredients (corn, meat, pepper, tomato):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against corn, meat, pepper, tomato. Candidates are from the same food group and used in at least 100 recipes.
