Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Buckwheat flour
Forms the body of the cake, giving it a earthy flavour and a dense, sturdy crumb.
Yeast
Produces gas during overnight fermentation, so the batter becomes light and slightly sour.
Baking powder
Releases gas when heated, helping the cake rise and turn lighter in texture.
Butter or oil
Greases the hot iron to prevent sticking and helps the bottom brown.

The step that matters

Cooking the first side. The batter needs a hot, well-greased surface so it sets quickly and browns evenly. If the iron is too cool or not greased, the cake sticks and tears when flipped.
