Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt codfish
Provides the main savoury flavour and salty character of the hash.
Potatoes
Bind the fish together and give the hash a soft, light body.
Butter
Adds richness and flavour, and helps the surface brown in the pan.
Milk
Adds moisture and makes the mashed potatoes smoother and lighter.

The step that matters

Fry gently until the bottom browns. Pressing the hash firmly into hot fat and frying slowly lets the bottom form an even brown crust through the Maillard reaction. Turning too early or using heat that is too high can leave the crust patchy or burnt before the centre is hot.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, pepper):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Tomatofits less well
  4. Asparagusfits less well

Fit is the average pairing score against butter, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
