Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green celery stalks
The main vegetable; boiling softens its fibrous texture until tender.
Dripping (or butter)
Fat that carries flavour and enriches the sauce.
Flour
Thickens the sauce when cooked briefly in the fat and liquid.

The step that matters

Stirring the flour into the melted fat. Cooking the flour in the fat before adding liquid coats the starch grains so they disperse evenly. Stirring until smooth prevents lumps and gives a uniformly thick sauce.

Swap the celery

How well each one fits the dish's main ingredients (butter, flour, pepper):

  1. Parsleyfits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Celerythe original

Fit is the average pairing score against butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
