Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Grease a deep baking dish.

  3. Layer prepared apples in the bottom of the dish and sprinkle lightly with sugar.

  4. Scatter small pieces of butter over the apples and dust with ground cinnamon.

  5. Add a layer of bread crumbs, ½ to ¾ inch thick.

  6. Repeat layering with apples, butter, and cinnamon until the dish is full.

  7. Ensure the top layer is crumbs and scatter small pieces of butter on top.

  8. Moisten the top layer with a couple of tablespoons of milk for even browning.

  9. Bake for 30 to 45 minutes, until a fork easily penetrates the apples.

  10. Serve hot or cold with butter, sugar, or sauce.
