Lemon Cheesecake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the beaten almonds, melted butter, sugar, egg yolks, lemon peel paste, and lemon juice until well combined.

  3. In a separate bowl, beat the reserved egg whites until stiff peaks form.

  4. Gently fold the egg whites into the almond mixture.

  5. Pour the mixture into a pan lined with a crust.

  6. Bake for about 30-40 minutes or until set.
