Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy body that holds the pudding together once mashed.
Milk
Adds moisture and makes the mashed potato smooth and soft.
Sugar
Adds sweetness to balance the mild potato flavour.
Egg
Sets during baking to form a firm, custard-like top layer.

The step that matters

Baking the egg topping. The beaten egg sets as its proteins coagulate in the oven. Baking too long pushes the egg past that point, making the top dry, rubbery, and prone to weeping.

Swap the potato

How well each one fits the dish's main ingredients (milk, sugar, egg, nutmeg):

  1. Sweet potatofits better
  2. Capsicumfits about as well
  3. Arrowrootfits about as well
  4. Potatothe original

Fit is the average pairing score against milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
