Home-made Pressed Cooked Corned Beef
Ingredients
Directions
Cut the fully cured corned beef into different sizes.
Pack the meat into a cooked corned beef press, sprinkling a little seasoning between each layer.
Screw the press tight and place it in hot water at 180°F (82°C) for 1.5 hours.
Reduce the temperature to 170°F (77°C) and cook for an additional hour.
For large presses, cook for up to 3 hours until the meat is thoroughly cooked.
After cooking, place the press in the cooler overnight.
The next morning, remove the chilled corned beef from the press.
Optionally, dip the cooked corned beef in hot lard or tallow for preservation.
