Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the paste

  1. Slowly stew the potatoes until soft.

  2. Mash the potatoes thoroughly.

  3. Add an equal quantity of cornmeal and mix into a thick paste.

  4. Stir in a small quantity of coarse sea salt.

Bake and cool

  1. Divide the paste into 4-pound loaves.

  2. Bake in a slow oven at 300°F (150°C) for 15 to 18 hours.

  3. Allow to cool before feeding to horses.

What each ingredient does

Potatoes
Supply moisture and starch that give the paste its body before baking.
Cornmeal
Adds bulk and starch that thicken the mash and hold the loaves together.

The step that matters

Bake in a slow oven. Low, long heat dries the loaves through gradually. Higher heat would brown and harden the outside while the centre stays moist and doughy, so the loaf would not set evenly.
