Directions

Prepare the meat

  1. Cook the hogs' heads, hearts, and cheekmeat until the bones are easily removed.

What each ingredient does

Hogs' heads
Provide collagen-rich meat and gelatin that help the chilled mixture hold together as a firm loaf.
Hearts
Add dense, lean meat that contributes to the body and texture of the finished loaf.
Cheekmeat
Adds tender, fatty meat that adds richness and moisture to the loaf.
Onions
Add moisture and a mild sweetness that balances the strong spices.

The step that matters

Pressing while cooling. Weight applied as the mixture cools lets the gelatin set and the pieces bind into a firm, sliceable loaf. Without even pressure, the head cheese can crumble or set with air pockets and an uneven texture.

Swap the onion

How well each one fits the dish's main ingredients (pepper, clove):

  1. Capsicumfits better
  2. Carrotfits better
  3. Eggplantfits better
  4. Onionthe original

Fit is the average pairing score against pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
