What each ingredient does

Kidney beans
The main ingredient, whose texture softens as the beans heat through in the water bath.

The step that matters

Seal the bottles tightly. A tight seal keeps air and spoilage microbes out while the beans heat. Filling every space in the bottle leaves less air to drive spoilage during processing.
