What each ingredient does

Currants
Provide the tart fruit juice that forms the syrup's base and flavor.
Grape syrup
Adds sweetness and body as the mixture thickens into syrup.

The step that matters

Cook until a light syrup consistency. Cooking evaporates water and concentrates the sugars, which thickens the syrup. Stopping too early leaves it thin and watery, while cooking too long makes it overly thick and prone to crystallizing as it cools.

Swap the currant

How well each one fits the dish's main ingredients (grape, syrup):

  1. Applefits better
  2. Pearfits better
  3. Vanillafits better
  4. Currantthe original

Fit is the average pairing score against grape, syrup. Candidates are from the same food group and used in at least 100 recipes.
