Pickled Onions

Ingredients

Directions

  1. Select small white onions and sort into two sizes: ¾ inch and ½ inch in diameter.

  2. Peel the onions and cover them with fresh water. Let them stand for 2 days, changing the water on the second day.

  3. Wash the onions well and place them in brine for 4 days, changing the brine at the end of the second day.

  4. Remove the onions from the brine and place them in boiling water for 10 minutes.

  5. Transfer the onions to cold water and let them sit for 2 hours.

  6. Drain the onions and pack them into jars, adding a few small red peppers and garnishing with sprigs of mace.

  7. Fill the jars to overflowing with spiced vinegar that has been prepared and allowed to stand with spice bags for a few days.

  8. Process the jars as you would for pickles.
