Pioklino. String Beans, Green Tomatoes, Cucumbers, Cauliflower, Etc.
Ingredients
Directions
Prepare salt brine by adding 1 ounce of bi-sulphite of soda to 8 gallons of water.
Soak vegetables in the brine for one day, changing the water several times.
Drain the vegetables and place them in barrels or stone jars.
Pour hot boiling vinegar over the vegetables.
After 10 days, drain the vinegar and replace it with new hot boiling vinegar.
For cucumbers and beans, soak in cold water for 12 hours, then briefly immerse in hot water with 1/4 ounce of sulphate of copper per 12 gallons.
Do not boil; stir gently until the vegetables are green, then wash thoroughly in water for several hours.
