What each ingredient does

Smelts
The main fish, which is packed in rows and cured by the vinegar.
Red-wine vinegar
Acid that preserves the fish and gives it a sharp, tangy flavour.
Saltpetre
Helps cure the fish and keeps its colour firm during pickling.
Cochineal
Natural red colouring that tints the fish and vinegar.
Sea salt
Draws out moisture and seasons the fish during curing.

The step that matters

Let the vinegar cool before pouring. Pouring hot vinegar over raw fish would partly cook it and could make the texture soft and uneven. Cooling it first keeps the fish firm while it pickles.

Swap the mace

How well each one fits the dish's main ingredients (smelt, pepper, clove, wine, vinegar):

  1. Thymefits better
  2. Allspicefits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against smelt, pepper, clove, wine, vinegar. Candidates are from the same food group and used in at least 100 recipes.
