Gather medium-sized peas, avoiding small ones as they soften in water.
Shell the peas immediately after gathering.
Separate the largest peas from the smaller ones.
Pack the peas tightly into bottles.
Seal the bottles and place them in a water bath.
Boil for 1.5 hours if the season is cool and moist, or 2 hours if hot and dry.
