Dried Tomatoes
Ingredients
Directions
Cut the ripe tomatoes in half.
Sprinkle a pinch of coarse sea salt on each cut surface.
Place the tomatoes on trays made of cheesecloth stretched over frames.
Elevate the trays a few feet above the ground.
Cover the trays each night or bring them indoors.
Dry the tomatoes in the sun for 8 to 10 days.
Once dried, pack them in wooden or tin vessels for storage.
To keep insects away, cover the tomatoes with mosquito-netting held a few inches above them.
