Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Preserved Cucumber
Ingredients
Directions
Brine and soak
Wash the cucumbers and place them in a strong brine.
Cover and set aside for 5 days.
Drain and wash the cucumbers in cold water.
Place them in a saucepan and cover with salted water.
Cover the pan and heat over low heat until the cucumbers are green.
Remove from heat and let cool.
Quarter each cucumber, remove the pulp and seeds, and soak the pieces in cold water for 2 days, changing the water twice daily.
Make the syrup and preserve
In a pot, combine the sugar, water, ginger, and lemon rind.
Boil for 10 minutes.
Add the cucumber pieces to the syrup and let them sit for 2 weeks, stirring every 2-3 days.
Re-boil the syrup each time you pour it off, adding more sugar as needed to achieve a thick syrup.
Ensure the syrup is cold before pouring it back over the cucumbers.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cucumbers
- Form the bulk of the preserve; they soften and become translucent as they absorb syrup.
- Sugar
- Sweetens and thickens the syrup, and helps preserve the cucumber pieces.
The step that matters
Re-boiling the syrup and keeping it cold before pouring. Sugar concentration must become high enough to draw water out of the cucumber and preserve it. Adding sugar and re-boiling thickens the syrup, while cooling it first prevents the pieces from cooking and turning mushy when poured back over them.

Fit is the average pairing score against sugar, lemon, ginger. Candidates are from the same food group and used in at least 100 recipes.
