What each ingredient does

Yellow peaches
Provide the fruit that gives the pickle its main texture and flavour.
Vinegar
Acidity preserves the fruit and gives the pickle its sharp bite.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Onions
Add body and savoury depth to the pickling liquid.
Turmeric
Gives the pickle its yellow colour and a warm, earthy flavour.

The step that matters

Pour the boiling mixture over the peaches. The liquid must be hot when poured so it softens and seasons the fruit and helps drive air out of the jars. Hot liquid and well-sealed jars together keep the pickle stable during storage.
