Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Break down into pulp, giving the chutney its body and bulk.
Moist sugar
Sweetens the chutney and helps it thicken and set as it reduces.
Vinegar
Provides acidity that balances the sweetness and helps preserve the chutney.
Raisins
Add chewy texture and concentrated sweetness.
Mustard seeds
Contribute pungency and a sharp, seedy bite.
Garlic or onions
Add savoury depth and aroma to the mixture.

The step that matters

Cooking the mixture down while stirring. Stirring constantly keeps the sugar and fruit from scorching on the bottom of the pan. Thickening happens as water evaporates and sugar concentrates, so the cook must judge the consistency rather than rely only on the clock.

Swap the raisin

How well each one fits the dish's main ingredients (apple, sugar, ginger, pepper, mustard, garlic, vinegar):

  1. Limefits better
  2. Lemonfits better
  3. Mangofits better
  4. Raisinthe original

Fit is the average pairing score against apple, sugar, ginger, pepper, mustard, garlic, vinegar. Candidates are from the same food group and used in at least 100 recipes.
