What each ingredient does

Gelatine
Sets the liquid peach mixture into a firm, sliceable structure as it cools.
Cream
Adds richness and a light, airy texture when whipped and folded in.
Peaches
Provide the main flavour and fruit pulp that gives the dessert its body.
Powdered sugar
Sweetens the peach pulp and blends smoothly into it without graininess.

The step that matters

Slowly add the dissolved gelatine to the peach mixture. Gelatine sets quickly as it cools, so adding it slowly and stirring keeps it evenly distributed and prevents lumps or stringy clumps in the cream.
