Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid strawberry mixture into a firm, sliceable cream when chilled.
Whipped cream
Adds fat and airy lightness, giving the set cream a softer, richer texture.
Stewed strawberries
Provide the main strawberry flavour and colour, and the puree forms the body of the cream.
Lemon juice
Adds acidity that brightens the sweetness and sharpens the strawberry flavour.

The step that matters

Dissolving the gelatine. Gelatine must be fully dissolved over gentle heat, not boiled, and well mixed in. Boiling weakens its setting power, and undissolved granules leave the cream rubbery or patchy.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream):

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
