Peach Parfait

Ingredients

Directions

Prepare

  1. Peel and stone the peaches, then press them through a colander.

  2. Crack the peach stones, mash the kernels, and place them in a saucepan with the sugar and water. Boil for 5 minutes, then strain the mixture and let it cool.

  3. Add the peaches to the cooled syrup and freeze the mixture.

Freeze and serve

  1. Once frozen, remove the dasher from the freezer and stir in the whipped cream.

  2. Cover the freezer without returning the dasher, repack, and let it sit for 2 hours.

  3. Serve in tall parfait glasses, garnished with chopped candied cherries or plain.

What each ingredient does

Peaches
Provide the main fruit flavor and the body of the parfait.
Sugar
Adds sweetness and lowers the freezing point, keeping the frozen texture soft.
Heavy cream
Adds fat and richness, giving a smooth, creamy texture when whipped in.

The step that matters

Stirring in the whipped cream. Whipped cream holds air and fat; if the base is too warm it melts and deflates, while gentle stirring keeps the air that makes the parfait light. Sugar also lowers the freezing point, so the mixture stays soft enough to fold.
