Directions
Prepare
Strip the peas from the pods and weigh them.
Add 1 ounce of preserving powder to the peas.
Cover the peas with water and boil briskly for 1 hour.
Remove the peas into wide-mouth jars and let them cool.
Seal and store
Place a piece of writing paper on the surface of the peas.
Pour ½ inch of melted American Fruit Wax over the paper.
Dip another piece of paper in the wax and place it over the mouth of the jar to keep out dust and insects.

What each ingredient does
- Green peas
- Form the main body of the preserve, providing the texture that remains after boiling.
- Preserving powder
- Acts as the preservative that helps keep the peas from spoiling in storage.
- American fruit wax
- Forms a sealed layer over the jar to block air and help keep out dust and insects.
The step that matters
Boiling the peas for 1 hour. Boiling must be brisk and sustained across the whole batch so heat fully penetrates the peas and the preserving powder works evenly. Under-boiling can leave the contents unsafe for storage.
